Ingredients:
- 1 thick slice sponge cake (about 40g)
- 60g mixed berries (strawberries, raspberries, blueberries)
- 1/4 tsp orange zest
- 1/8 tsp ground cinnamon
- 70ml Meadowland Double 1L
- 1/4 tsp vanilla extract
- 1 tbsp sugar
Method:
- Cut the sponge cake into small cubes and arrange them at the bottom of a clear serving glass or bowl
- Scatter the mixed berries evenly over the sponge cake, reserving a few for garnish
- Sprinkle orange zest and a pinch of ground cinnamon over the berry layer
- In a mixing bowl, pour Meadowland Double 1L. Add sugar and vanilla extract
- Whip the Meadowland Double mixture with a hand whisk or electric mixer until soft peaks form and the sugar is dissolved
- Spoon or pipe the whipped Meadowland Double cream over the berry layer, spreading it evenly
- Garnish the top with the reserved berries, a light dusting of cinnamon, and a touch of orange zest
- Chill in the refrigerator for at least 15 minutes before serving for best flavour
