How to clean commercial kitchen equipment

Keeping your equipment clean is essential for hygiene, safety, and lifespan. Here’s how to care for different types: 

  • Stainless steel tables: Wipe daily with warm soapy water; use stainless-steel polish weekly to maintain shine and prevent corrosion. 
  • Cold storage units: Clean internal surfaces weekly with food-safe disinfectant; defrost periodically if not auto-defrosting. 
  • Ovens and hobs: Wipe down after use; deep clean weekly with non-abrasive degreasers. 
  • Dishwashers: Descale regularly, clean filters weekly, and wipe door seals daily. 
  • Ventilation systems: Clean grease filters monthly and schedule professional duct cleaning every 6 months. 

What are the requirements for a commercial kitchen?

To operate legally and safely, a commercial kitchen must meet several regulatory requirements. Which includes having proper handwashing facilities with hot and cold water, clearly designated areas for raw and cooked food, and a layout that minimises cross-contamination risks.  

Fire safety must also be in place with extinguishers, blankets, and often ventilation hoods with built-in extraction systems. Adequate airflow is essential, both for comfort and for removing smoke, grease, and odours.  

Kitchens must also have pest control measures, waste disposal systems, and meet all local food hygiene standards before trading.
